Although summer isn’t here yet, I guess it’s never too early for milkshakes!? I recently felt like making a healthy version of a strawberry milkshake and came up with a simple recipe that my 3 year old and I absolutely loved. This delicious recipe requires just a handful of all natural plant-based ingredients and unlike most other vegan milkshake recipes, there is no need for a boxed milk alternative (yay for no gums and other additives!).
This recipe is sweetened with only fiber-rich strawberries and bananas. Cashews help with the creamy texture of this drink and also provide a great source of vegan protein, as well as copper, zinc, magnesium and heart-healthy fats among many other beneficial nutrients.
Vegan Strawberry Milkshake – Yield: 2 (~10oz) servings
- ½ cup cashews
- 1 frozen banana (ideally pre-cut in 3-4 pieces for easier blending)
- 4-5 frozen strawberries (depending on size)
- 16-20oz water (start with less and increase until you reach desired consistency)
- ½ tsp vanilla extract
Combine all ingredients in a high speed blender and blend until a thick shake is created. Enjoy!
